Pretzel Bao With Sweet Sesame-Hot Mustard Pork Recipe (2)

Why It Works

  • The tangzhong "water roux" gives the buns an especially light and fluffy interior
  • Baking soda solution stands in for lye to give the characteristic pretzel flavor and outer texture

German-Chinese fusion may sound strange, but when pillowy pretzel buns meet bao, and mustard-slathered roasted pork meats char siu, it works. Chinese hot mustard, sesame paste, and honey make a flavor-packed change-up from the traditional char siu sauce, while a special Chinese bread-making trick makes the pretzel buns even more moist and tender. It's impossible not to love this Deutsch version of a Dim Sum classic.

Directions

  1. For the Marinated Pork: In a large container, mix together all of the marinade ingredients (except the pork) until well combined. Add pork and toss to cover with the marinade. Cover and refrigerate at least 2 hours or overnight, turning at least once.

  2. Preheat oven to 350°F. Line a baking sheet with aluminum foil and place a rack on top. Remove the pork from the marinade and place on the rack. Roast until pork reaches 135°F on an instant-read thermometer when inserted in the center, about 40 minutes.

  3. Meanwhile, For the Glaze: In a small bowl, mix together honey and water for the glaze. Brush the pork with the glaze and set the oven to broil. Broil the pork, turning, until charred all over, about 5 minutes. Let rest 10 minutes.

  4. For the Sauce: Combine all sauce ingredients in a bowl and set aside.

  5. Cut roasted pork into small pieces and mix in a large bowl with the sauce. Refrigerate until ready to stuff.

  7. For the Dough: Warm 1/2 cup of milk and pour in the yeast. Let stand until frothy, about 10 minutes. Combine the yeast-milk mixture, the Tangzhong, and the remaining dough ingredients in a large bowl, and stir until the dough pulls away from the side of the bowl, about 5 minutes. Remove from the bowl and knead on a lightly floured work surface until stretchy, about 10 minutes longer. Spray the dough all over with nonstick spray and return to the bowl. Place plastic wrap directly on top of the dough to prevent it from drying out and set in a warm, draft free area until doubled in size, about 1 hour.

  8. Remove the dough from the bowl and divide into 16 even pieces. Roll the pieces into balls. Using the palm of your hand, press down each dough ball until flat. Place 2 tablespoons of filling on the center of each round. Pull up the edges and pinch together to seal. Transfer the filled buns, seam-side down, to a parchment-lined baking sheet. Re-cover with the coated plastic wrap and let rise for 1 hour.

  10. For Topping the Buns: In a small bowl, beat the egg with the water. Brush the buns with the egg mixture and sprinkle with sesame seeds and salt, to your preference. Using a sharp knife or pair of kitchen shears, slice the very tops of the buns, making sure not to pierce through to the filling. Bake until browned, about 20 minutes, turning halfway through.

    Serve warm.

Notes

Regular baking soda will work as well if preferred, but for darker, more authentic-tasting pretzels, baked baking soda works best. To make baked baking soda, spread baking soda on a foil-lined baking sheet and bake at 300°F for 1 hour.

FAQs

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

The answer lies in a brief dip in an alkaline water bath before baking. This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

Is pretzel dough the same as bread dough? ›

Soft pretzels are just a yeast bread is that formed into a pretzel shape. The one big difference in pretzel making, as opposed to a regular bread, is that pretzels are boiled and then baked. It is the boiling that gives the outside of the pretzel its beautiful golden brown color and uniquely crisp and chewy texture.

Do you have to boil pretzels before baking? ›

Like bagels, pretzels are made in boiling water prior to baking to give them their snappy outsides and chewy insides (messy!). Soft pretzels must be boiled, or dipped in a baking soda bath (or lye if you're gusty and strict with your pretzel traditions). THEN, they can be baked.

How do you know when bao buns are cooked? ›

Heat a large steamer over a medium-high heat. Steam the buns for 8 mins until puffed up (you'll need to do this in batches). Prise open each bun and fill with our barbecue pork and pickled carrot & mooli. Eat while they're still warm.

What makes a pretzel bun taste like a pretzel? ›

The pretzel buns get a water bath in a solution made from water and baked baking soda - this gives them that signature pretzel taste. Egg wash and score.

What is the best flour for pretzels? ›

I really recommend that you use bread flour rather than all purpose when making soft pretzels. Bread flour has a higher gluten content, which in this case yields softer and chewier soft pretzels than you could expect with all purpose flour.

Can pretzel dough sit overnight? ›

While an option for making quick pretzels is given, too, I highly recommend the overnight method because the dough's flavor really develops during the slow fermentation, becoming nuanced with a yeasty tang that is worth every moment of anticipation.

Why are pretzel buns so good? ›

The pretzel bun is the perfect choice for these sliders because it brings a saltiness that perfectly complements the ham and Swiss cheese — as well as the tangy stone ground mustard. Additionally, the pretzel bun is a bit more dense than a regular bun, making for a heartier meal.

What is the difference between a Bavarian pretzel and a regular pretzel? ›

Unlike their American counterpart, Bavarian pretzels pack a denser, chewier inside and a darker, crispier outside. And there's a certain "tang" to the Bavarian-style pretzel that sets it apart from other soft pretzels. But best of all, it doesn't need to be dipped in cheese or drenched in butter to taste delicious!

What country is famous for making pretzels? ›

Its origin is often attributed to Germany, specifically to the region of Bavaria, although its precise beginnings are somewhat debated.

Why do you put baking soda in water when making pretzels? ›

Like lye, baking soda is an alkaline substance, and when mixed with water and brushed over the pretzel dough, it changes the pH of the dough and gelates the surface starch. In the oven, the starch gel hardens and the alkaline baking soda makes browning happen fast.

How do you keep bao buns moist? ›

Cover with parchment paper to prevent them drying out while you roll the rest.

Why are my bao buns tough? ›

Preboiling the water can sometimes lead to a firmer texture if the bao has not fully leavened or proofed. I also find that most baos will need 10-25 minutes of steaming depending on the size and which rack the baos steam on.

Should bao buns be warm or cold? ›

Eat the buns warm! If they cool off, you can reheat them once more by steaming again for ~2 minutes.

What gives pretzels their distinctive taste? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

What is the secret solution for Auntie Anne's pretzels? ›

Whisk together 2 cups (454 grams) of warm water and the 1/3 cup (90 grams) baking soda in a shallow dish. Dip the pretzels into the baking soda bath. Flip and dip the other side. Place the dipped pretzels onto a parchment-lined baking sheet.

Why does pretzel bread taste different? ›

They're Boiled, Not Baked.

The dough is first shaped into a long rope and then boiled in water before being baked at a higher temperature than bread. This process creates a distinctive pretzel shape and gives them their unique taste.

What chemical are pretzels dipped in? ›

Lye is primarily used to make pretzels, and it's the reason for their unmistakable shiny, mahogany color. To prepare, shaped pretzels are dipped in a lye bath, then baked in the oven.
